  • Brawn, how to make?

    Brawn of the old days was apparently quite good and modern brawn is not the same.

    Anyone know how to make or cook brawn up?

    And is it any good?

      Apparently Pigs Trotters are also very good for Brawn. They are full of Gelatin.

      Have never made it myself but maybe have a look at the River Cottage site. That's where I've seen it made by Hugh.
